Ingredients:
-2 cups Brussel Sprouts, halved -1/4 large red onion, large dice (half a medium red onion) -1 Tbsp soy sauce -2.5 Tbsp balsamic vinegar -2 ounces herbed goat cheese, crumbled -10-12 cashews, chopped -cooking oil (canola or peanut) -2 oz water Instructions: 1) Over medium high heat, heat the cooking oil until shimmering. Add the brussel sprouts, cook until starting to turn golden brown on spots of the brussel sprouts. 2) Add the water, cook until water has evaporated. Add a little more oil to pan if needed. continue cooking the brussel sprouts until browned. 3) Add the soy sauce, cook until no more liquid in the bottom pan 4) Add balsamic vinegar, cook until liquid is almost completely evaporated. Turn off and add crumbled goat cheese over the top and cashews. The remaining heat from the pan should cook the rest of the balsamic vinegar out while crumbling the goat cheese. Turning off the pan before all of the liquid is evaporated keeps it from burning. 5) Serve up and enjoy with a friend or eat them all yourself :) Notes: 1) If gluten free, use gluten free soy sauce 2) Can use regular goat cheese or blue cheese 3) If you do not like cashews use another nut, this adds a nice crunch or just omit nuts all together 4) Careful of over cooking the brussel sprouts, they can become bitter. 5) If you use olive oil be careful because the smoke point is lower than canola and peanut oil and can cause the brussel sprouts to burn and become bitter. Ingredients: -10-12 strawberries, sliced -1/2 cup sugar -2 Tbsp Honey -2 tsp lemon juice -2 tsp vanilla extract -16 oz heavy whipping cream Instructions: 1) Mix the strawberries, sugar, honey, lemon juice and vanilla until combined. Let sit for at least 10 minutes. Will create a nice syrup. 2) With a potato masher, mash the mixture to desired chunks (I mashed half into small pieces and the other half left much bigger) 3) Add heavy whipping cream and stir until just combined 4) Add to ice cream maker and follow your manufacturers instructions. (Mine took roughly 20 minutes) 5) Can eat right away but will be like soft serve, otherwise let set in freezer for 3-4 hours Please if you have any questions DM me on instagram. Thank you :) Ingredients: Meatballs: -16 oz ground turkey or pork -1/4 onion, minced -1 celery stick, minced -1/2" cube ginger, minced -3-4 cloves garlic, minced -2 Tbsp soy sauce -2 Tbsp ketchup -1/4 cup panko bread crumb -2 tsp salt -1 tsp pepper Chili Glaze: -15 oz tomato sauce -8 oz sweet chili sauce (more or less depending on how spicy you like it) -Salt to taste Sandwich/toppings: -French Baguette (we used hoagie rolls because that's what we could get) -pickled red onion -pickled or fresh jalapeno, sliced -Cucumber, thinly sliced -cilantro -Sweet chili Mayo -pickled carrots (not pictured because we did not have carrot) Instructions: 1) Mix the ground turkey, onion, celery, ginger, soy sauce, ketchup, bread crumb, salt and pepper. Roll meatballs to desired size. 2) Over medium heat brown the meatballs on two sides, then add the tomato sauce and sweet chili sauce and stir. Bring to a boil, then lower the heat and simmer until meatballs are fully cooked through. (Cooking times will vary depending size of meatballs) 3) Build your delicious sandwich and enjoy Notes: 1) Can use gluten free panko bread crumbs if you are gluten free 2) Also for gluten free, make a "fat chip" to serve on. Bake a potato and then slice 1/4" thick and pan fry until crispy. Ingredients: - 4 lbs Bone in pork shoulder - 4 Tbsp Hawaiian Pink Salt or Sea Salt - 4 Tbsp Liquid smoke - 1/2 Head of cabbage, 2" squares (optional) - 3 cups of water Instructions: 1) Preheat the oven to 350F. Rub the pork shoulder with the liquid smoke and the Salt 2) Place the cabbage on heavy duty foil, and place the seasoned pork shoulder on top of the cabbage and wrap the foil up the sides of the pork. 3) Place in a baking dish, add 3 cups of water to the baking dish. Cover with foil and bake for 4-5 hours or until pork falls off the bone. Notes: 1) Banana leaves are better to wrap the pork, if you have access to them, will add sweetness. 2) Himalayan pink salt is another great substitute for the Hawaiian Salt. -1.5 lbs Chicken thighs or breast Chicken Marinate= -6 oz Greek yogurt -2 Lemons juiced -3/4 tsp Salt -1/2 tsp cumin -1/2 tsp garlic powder -1/2 tsp smoked paprika -1/2 tsp ground coriander -1/4 tsp chili powder -1/4 tsp onion powder -1/4 tsp turmeric -1/8 tsp Allspice -1/8 fresh cracked pepper Yogurt Sauce= -6 oz Greek yogurt -1.5 Tbsp Tahini paste -1 tsp dried dill -3 cloves garlic, minced -1 tsp apple cider vinegar -Salt to taste Instructions: 1) Combine chicken, yogurt, lemon juice, and spices in bowl and marinade minimum 1 hour. I marinated mine 6 hours. 2)For yogurt sauce combine yogurt, tahini, garlic, apple cider vinegar and salt, at least one hour ahead of time. 3) Cook chicken in a well oiled saute pan over medium heat. -5 ears of Corn, corn off the cobb -2 jalapenos, deseeded and small dice -1/2 onion, small diced -1/2 red bell pepper, diced -1/2 yellow bell pepper, diced -oil -1 Tbsp of butter -Salt and pepper to taste Garnish with: -Cilantro, Chopped -Cotija Cheese, crumbled -Fresh lime juice Instructions: 1) Over medium heat in a saute pan saute the onion, bell pepper, and jalapeno. 2) Add the butter and turn up the heat to medium high and add the corn, cook until small number of corn kernels turns golden brown. Salt and pepper to taste 3) Garnish with crumbled cotija cheese, chopped cilantro and a squeeze of fresh lime juice and enjoy! Notes: 1) Can use any color bell peppers you have on hand or just use jalapeno 2) IF you want it spicy keep the seeds in the jalapeno 3) Can toss the cilantro with the corn if you don't want to garnish each serving. -1 yellow onion, small dice -6-8 cloves garlic, minced -1/2 cup +2 Tbsp soy sauce -1/2 TBSP ground black peppercorn -3 bay leaves -4 Tbsp rice vinegar -1 Tbsp Apple cider vinegar -1 Tbsp Raw Cane Sugar -2.5 lbs bone in pork shoulder -1/2 cup of stock -vegetable oil -Salt to taste Instructions: 1) Preheat oven to 350F. While the oven is preheating, heat a large pot over medium heat, coat the bottom of the pan with oil and add onions. Saute until translucent. 2) Add the garlic to the onions and cook until aromatic. 3) Add the pork shoulder, soy sauce, rice vinegar, apple cider vinegar, pepper, bay leaves, sugar and stock. 4) Bring liquid up to a boil, cover and then bake for 3-4 hours or until pork is tender 5) Pull the bone out and shred the pork. Serve over white rice and enjoy! Notes: 1) If you do not have sugar in the raw, you can use brown sugar or palm sugar 2) If you do not have both vinegars its ok to use just one or even white vinegar. 3) This can be made with chicken as well 4) If short on time cube the pork into chunks and massage the pork with the 2 Tbsp of soy sauce. 5) All soy sauces taste slightly different so make sure to adjust according to taste. -1/2 onion, small dice -6 cloves garlic, minced -1/2 Tbsp Onion Powder -1/2 Tbsp Garlic Powder -3/4 Tbsp dried Basil -3/4 Tbsp dried Oregano -1 tsp Red Chili Flake (not in video) -28 oz can San Marzano Tomatoes -6 oz tomato paste -1 tsp sugar -Salt and pepper to taste -1/4 cup grated Parmesan (not in video) Instructions: 1)In a sauce pot over medium heat coat the bottom of the pan with vegetable oil and add the onions and salt. Sweat the onions (release their liquid) 2)Add the garlic and cook until aromatic 3)Add the dried seasonings (onion powder, garlic powder, dried basil, dried oregano, red chili flakes) and cook until aromatic. 4)Add the San Marzano tomatoes and tomato paste. Stir to incorporate 5)Add the sugar and more salt if necessary. Add the grated parmesan and stir. 6)Cover and bring to a boil and stir, then lower the heat and simmer for at least twenty minutes or until you are ready to eat 7)Serve over your favorite pasta Notes: 1)If you do not have a can of San Marzanos, you can use a can of tomato sauce 2)Add less or more chili flakes depending how spicy you like it 3)Use leftover sauce to make lasagna 4)Sugar helps cut the acidity of the tomato 5)Save your parmesan rinds. Ingredients: -16 oz store bought pizza dough -3oz tomatillo sauce -6 oz Carnitas -1 jalapeno, sliced -3 tablespoons red onion, small dice -1/2 cup jack cheese (or more if you are like me) -3 oz cilantro, fresh Instructions: 1)Take the dough out of the fridge at least 60 minutes in advance or to dough instructions. 2)Preheat the oven to 450F or as directed for your pizza dough. Preheat a large baking sheet in the oven for 10-15 minutes. This helps crisp the bottom. 3)On a piece of parchment paper roll out dough until it is the same size as the baking sheet. Lightly flour the hot sheet pan and transfer dough. 4)Ladle tomatillo sauce and spread evenly. Add half the cheese. Then add carnitas, jalapeno and red onion. Top with the rest of the cheese. 5)Bake in the lower third of oven for 15-17 minutes or until golden brown 6)After removing from the oven add the cilantro leaves, slice into desired size pieces and enjoy.
