Ingredients: -1/3 cup dried red chili flakes -23 oz tomato sauce -3oz tomato paste (half a small can) -1 Tbsp salt -1 Tbsp sugar -1 cup water Instructions: 1) Over medium heat toast the chili flakes in a dry skillet until they are dark brown. This usually takes 3-5 minutes. 2) Add tomato sauce, paste, salt, sugar, and water. Simmer for 10 minutes. Taste and adjust seasoning. It will taste bland without enough salt. Cool and refrigerate. Notes: 1) WARNING, this will taste very spicy when you try the salsa hot. Once cooled it wont be as spicy and flavors will meld. 2) Make sure you use enough salt! 3) Salsa tasted better once cold. Ingredients: -Country style boneless pork ribs or pork butt (i've been liking the country ribs more lately) -Garlic salt -stock Instructions: 1) Pre-heat oven to 325F. Rub the pork with garlic salt. Put into a baking dish and add stock halfway up the pork. Cover and bake until pulls apart. 2) Shred pork and save the pan drippings. 3) Heat a saute pan over medium heat, add a little bit of oil. Add the shredded pork, once it starts to brown add some of the pan drippings. Add garlic salt to taste. Cook until desired crisp. Notes: 1) Error on the side of caution on the garlic salt when roasting the pork, because you can always add more when frying the carnitas. 2) If you over fry the carnitas and starts to get dry add more drippings. Thank you :) Ingredients: -1/2 cilantro, chopped -1 bunch green onion, sliced -1 tsp dried oregano -2 pinches red chili flake (adjust for spicy level) -3-4 cloves garlic, rough chop -salt to taste -1/2 cup red wine vinegar -3/4 cup extra virgin olive oil Instructions: 1) Put all of the ingredients except the olive oil in blender or food processor. Pulse until combined. Do NOT over blend otherwise will turn into a puree. 2) Slowly add in olive oil while pulsing or slowly add in while whisking. 3) Serve and enjoy Notes: 1) Use whisking method if you are worried you will puree or want to keep in bigger pieces. 2) Serve over fish, steak, chicken or your favorite veggies.
