Great way to utilize leftover carnitas!
Ingredients: -16 oz store bought pizza dough -3oz tomatillo sauce -6 oz Carnitas -1 jalapeno, sliced -3 tablespoons red onion, small dice -1/2 cup jack cheese (or more if you are like me) -3 oz cilantro, fresh Instructions: 1)Take the dough out of the fridge at least 60 minutes in advance or to dough instructions. 2)Preheat the oven to 450F or as directed for your pizza dough. Preheat a large baking sheet in the oven for 10-15 minutes. This helps crisp the bottom. 3)On a piece of parchment paper roll out dough until it is the same size as the baking sheet. Lightly flour the hot sheet pan and transfer dough. 4)Ladle tomatillo sauce and spread evenly. Add half the cheese. Then add carnitas, jalapeno and red onion. Top with the rest of the cheese. 5)Bake in the lower third of oven for 15-17 minutes or until golden brown 6)After removing from the oven add the cilantro leaves, slice into desired size pieces and enjoy. Notes: 1)Can use a mix of pepper-jack cheese and mozzarella 2)Use your favorite tomatillo sauce, I will have a recipe for homemade tomatillo sauce coming soon 3) Carnitas recipe linked on main page! :) Please if you have any questions DM me on instagram.
