Ingredients:
-2 cups Brussel Sprouts, halved -1/4 large red onion, large dice (half a medium red onion) -1 Tbsp soy sauce -2.5 Tbsp balsamic vinegar -2 ounces herbed goat cheese, crumbled -10-12 cashews, chopped -cooking oil (canola or peanut) -2 oz water Instructions: 1) Over medium high heat, heat the cooking oil until shimmering. Add the brussel sprouts, cook until starting to turn golden brown on spots of the brussel sprouts. 2) Add the water, cook until water has evaporated. Add a little more oil to pan if needed. continue cooking the brussel sprouts until browned. 3) Add the soy sauce, cook until no more liquid in the bottom pan 4) Add balsamic vinegar, cook until liquid is almost completely evaporated. Turn off and add crumbled goat cheese over the top and cashews. The remaining heat from the pan should cook the rest of the balsamic vinegar out while crumbling the goat cheese. Turning off the pan before all of the liquid is evaporated keeps it from burning. 5) Serve up and enjoy with a friend or eat them all yourself :) Notes: 1) If gluten free, use gluten free soy sauce 2) Can use regular goat cheese or blue cheese 3) If you do not like cashews use another nut, this adds a nice crunch or just omit nuts all together 4) Careful of over cooking the brussel sprouts, they can become bitter. 5) If you use olive oil be careful because the smoke point is lower than canola and peanut oil and can cause the brussel sprouts to burn and become bitter. If you use an oil with a lower smoke point cook over medium heat. 6) Bacon is delicious in this dish as well. I mean who doesn't like bacon Please if you have any questions DM me on instagram.
