Ingredients:
-1 yellow onion, small dice -6-8 cloves garlic, minced -1/2 cup +2 Tbsp soy sauce -1/2 TBSP ground black peppercorn -3 bay leaves -4 Tbsp rice vinegar -1 Tbsp Apple cider vinegar -1 Tbsp Raw Cane Sugar -2.5 lbs bone in pork shoulder -1/2 cup of stock -vegetable oil -Salt to taste Instructions: 1) Preheat oven to 350F. While the oven is preheating, heat a large pot over medium heat, coat the bottom of the pan with oil and add onions. Saute until translucent. 2) Add the garlic to the onions and cook until aromatic. 3) Add the pork shoulder, soy sauce, rice vinegar, apple cider vinegar, pepper, bay leaves, sugar and stock. 4) Bring liquid up to a boil, cover and then bake for 3-4 hours or until pork is tender 5) Pull the bone out and shred the pork. Serve over white rice and enjoy! Notes: 1) If you do not have sugar in the raw, you can use brown sugar or palm sugar 2) If you do not have both vinegars its ok to use just one or even white vinegar. 3) This can be made with chicken as well 4) If short on time cube the pork into chunks and massage the pork with the 2 Tbsp of soy sauce. 5) All soy sauces taste slightly different so make sure to adjust according to taste.
