Ingredients:
-5 ears of Corn, corn off the cobb -2 jalapenos, deseeded and small dice -1/2 onion, small diced -1/2 red bell pepper, diced -1/2 yellow bell pepper, diced -oil -1 Tbsp of butter -Salt and pepper to taste Garnish with: -Cilantro, Chopped -Cotija Cheese, crumbled -Fresh lime juice Instructions: 1) Over medium heat in a saute pan saute the onion, bell pepper, and jalapeno. 2) Add the butter and turn up the heat to medium high and add the corn, cook until small number of corn kernels turns golden brown. Salt and pepper to taste 3) Garnish with crumbled cotija cheese, chopped cilantro and a squeeze of fresh lime juice and enjoy! Notes: 1) Can use any color bell peppers you have on hand or just use jalapeno 2) IF you want it spicy keep the seeds in the jalapeno 3) Can toss the cilantro with the corn if you don't want to garnish each serving. For this recipe use 1 bunch of cilantro chopped or however much your taste buds prefer! 4) Have fun :) Please if you have any questions DM me on instagram.
