Ingredients: 1.5 lb pork Belly salt Sauce: 2tbsp dark soy sauce 2 tbsp soy sauce 1 tbsp sweet soy sauce 1 tbsp sesame oil 1 tbsp black vinegar 1 tbsp shoaxing cooking wine 1/2 tbsp fish sauce 1/4 cup brown sugar 1" fresh ginger, minced 3-4 garlic cloves, minced Instructions: 1) Preheat oven to 350F. 2) With a sharp knife, make parallel cuts across the skin and fat of the pork belly, 1/4" apart from each other. Be careful you only want to cut through the skin and fat, not the meat. 3) Repeat step 2 but perpendicular to the initial cuts. (The cuts should make squares on top) 4) Place pork belly on a baking sheet fat side up. Rub the pork belly with liberal amounts of salt. 5) Bake for 1-1.5 hours or until the fat has rendered and become tender. Edges of the fat will start to brown and crisp too. While the pork belly is in the oven mix the ingredients for the sauce. 6) Remove from oven and let cool. Brush the salt off the top (you wont get it all off, but want to remove most of the salt) 7) Cube the pork belly into 1/4" pieces. Heat a tall sided pan over medium heat. Cook half the pork belly at a time, as to not overcrowd the pan. Stir pieces occasionally, the bottom of the pan should brown but not burn. If the bottom of the pan starts to burn your heat is too high. Cook until the pieces have become extra crispy remove from the pan. Repeat with the other half of the pork belly. 8) Remove the pork belly from the pan. Drain the oil into a container that can handle hot oil and be careful not to burn yourself. 9) In the same pan, lower the heat, and add the sauce. Cook the sauce until it starts to bubble and reduce by about a third. Add the pork belly into the pan and continue to cook. Toss the pork belly and once the sauce clings to the sides and becomes sticky remove from the heat. Notes: 1) Pictures below should help. 2) If you do not have black vinegar use rice vinegar. Will not be the same but can still make this delicious dish. 3) If you do not have sweet soy sauce add mirin.
